INGREDIENTS

2 cups of Isadora® Whole Pinto Beans, drained
2 tomatoes, chopped
1 red pepper, chopped
2 jalapeño peppers, finely chopped
3/4 of a cup of lemon juice
1 1/4 teaspoons of cilantro
A pinch of ground bird's beak chili
1/2 cup of canned corn
1 tablespoon of olive oil
1/2 cup of chopped onion
1/2 teaspoon of chopped garlic
1 1/2 cup of brown rice, cooked

HOW TO COOK

Mix well all ingredients together in a large bowl. Lightly toss and serve.
