INGREDIENTS

1 cup of Isadora® Whole Pinto beans
Lettuce leaves
Kale leaves
1 cup of black and white quinoa, cooked
2 zucchinis, cubed
1/2 cup of goat cheese
Vinaigrette
1/2 cup of red wine vinegar
1/2 cup of olive oil
2 tablespoons of honey
Juice of 2 lemons
Salt and pepper to taste

HOW TO COOK

Cook the quinoa according to the instructions in the box, set aside.

Cut the zucchinis. Use a melon baller to form small balls with the goat cheese.

For the vinaigrette, mix the ingredients in a bowl with a hand mixer until they’re well-integrated.

Serve the salad in a large, shallow bowl. Pour the vinaigrette over the salad just before serving.
