Breakfast burritos

Breakfast is the most important meal of the day. Make some delicious burritos and add some Isadora® beans, you’ll have a well balance and delicious breakfast.

Ingredients

  • 1 pkg. Isadora® low-fat refried beans
    8 small whole wheat flour tortillas
    Cooking spray or olive oil
    4 eggs
    1 TBS. water or milk
    ¼ teaspoon salt or to taste
    Pepper to taste
    ½ cup grated jack cheese
    Salsa for serving

How to Cook

  1. 1 Stir together eggs, water or milk, and salt and pepper. Heat small skillet over medium-low heat, add cooking spray or olive oil, and add egg mixture. Cook until eggs to desired doneness using a heat resistant spatula to stir. Sprinkle grated cheese over the eggs and cover to keep warm.
  1. 2 Spread a layer of Isadora® refried beans on a tortilla and place on a paper towel. Microwave on high for about 30-45 seconds, until steaming hot. Add the egg and cheese mixture in a line down the center and roll up. Serve with salsa.
